Introducing Our Sparkling Cabernet Sauvignon – A Fresh Expression of Elegance

Sometimes, arriving early can lead to the greatest rewards. In 2018, I had an exceptionally busy harvest season. The vineyard where this Cabernet Sauvignon was grown was simply too far for me to monitor regularly, so I trusted the grower to make the call on when to harvest, based on their experience. When the fruit arrived, it was far under-ripe for a bold, structured Cab. I briefly considered making a rosé, which would have been a good option, but the volume was just too large for that. Reluctantly, I decided to proceed with making a red wine. What a mistake that turned out to be. The wine was overly fruity and soft, lacking the tannin structure and boldness that define a great red wine.

For a full year, I tried to ignore it as it aged in neutral barrels, resting sur lie. But sure enough, when I tasted it again a year later, it had developed a stunning creamy texture with an incredible expression of raspberry flavor. That’s when it sparked my imagination. I began thinking outside the box: Why not make a red sparkling wine? And so, it began—a first.
